But the thing about this not matching your values is it goes both ways 

This.  Those of us who see escorts are not entitiled to any sort of moral/social high ground or value than the escorts themselves.   We are no less damaged, deluded or tainted by this industry by our participation in it.  If you're someone who sees escorts and then looks down on them as though they're intrinsically lesser or lower value than you then you need to grow the fuck up and look in a mirror. 

To answer the original question I would never date an escort who was actively working but if the right girl, situation, connection came along I'd consider settling down at some point with someone who had been an escort.  If nothing else it would be a situation where we could both be open and transparent about our respective pasts-- something that would be very hard in a relationship with someone who hadn't been an escort.

So men who have seen escorts aren't allowed to not want to date an escort? 

This comes across as projection from someone who's way too immersed in the world of seeing escorts.
